Up there in my top 3 desserts, Lemon Meringue Pie ?. I’ve never made one before and always thought it looked so difficult! I can’t tell you how chuffed I am with myself for making this from scratch. I normally get my lemon meringue fix in a local cafe but that went out the window about 8 weeks ago!! Some of you may remember my faux pas with the whole baking blind thing the other day so you will be pleased to know I am now using parchment paper as the whole world seemed to know already except me ?♀️?. The meringue hasn’t risen like I’d hoped, not sure why, but other than that it looks pretty perfect to me and I’ll deffo try it again! Looking forward to a big fat slice of this after dinner!
